Walnut Pate

This recipe is great for the holidays and entertaining, or when you feel like treating yourself to a tasty and nutritious meal. It can be spread on to celery sticks, rolled up into your favorite green leaves like lettuce or collards, or thinned with water or citrus juice and poured over salad or a bowl of mixed veggies.

1 cup soaked walnuts (soaked overnight and rinsed)

1 medium zucchini squash

juice of 1 lemon

2 tablespoons dulse flakes

Blend all ingredients together until thoroughly mixed and enjoy. A food process may be used instead of a blender if you wish. If your walnuts are bitter then two pitted dates may be added.
