"Living" Salad Dressing

Juice and pulp from 1 large orange

2 teaspoons of tahini or other nut butter

1 teaspoon of live miso

4 tablespoons Natural Zing cultured vegetables

Put all ingredients into a large jar with lid and shake like crazy for a minute or so. And of course you could use your blender if you want to get high tech. If you do use a blender I would toss in a little fresh ginger root too.

The Natural Zing is a very finely grated cultured vegetable product by Rejuvenative Foods Company in Santa Cruz, California. It’s carried by groceries throughout California, but I’m sure if it’s available outside California. You could substitute any live cultured vegetable product available where you are. I like the Natural Zing because it does not have any added salt, and it has an enjoyable tangy flavor.
