Fiesta Slaw

This is another very tasty slaw that everyone will love and only takes 15 -20 minutes to make. Clean-up about 5 minutes more.

Process the napa cabbage, carrots, beet, sweet peppers, and hot pepper using the slaw grater on your food processor. Or you could finely slice the napa cabbage and use a hand grater for the others. Finely chop the cilantro and dice the fresh ginger. Zest the outside of the lemon and juice the inside.

Mix all ingredients together in a large bowl and let sit for at least 20 minutes so the raisins soak up the juice. It could sit longer if you can hold off...lol.

Serves 2 as a main course. Enjoy!

Ingredients:

1 large napa cabbage

2 large carrots

2 sweet red peppers

1 small beet

½ lb raisins

½ bunch cilantro

1 hot pepper

1” fresh ginger

1 meyer Lemon

Any dressing

Do you add any raw dressing one this fiesta, i am kinda worry about taste without dressing.
Ps i am new to raw food.

This salad makes it's own wonderful dressing with the juices from the vegetables and lemon. I would encourage you to try it as is. If you wanted you could always add a little flax or olive oil. Enjoy!
