Chia and Ginger Salad Dressing

This recipe can be made a little thicker and used as a dip or a spread or can be used as is for a delicious salad dressing. There are two versions shown here, one with more turmeric and some cayenne pepper.

Juice from 2 small oranges

1 small avocado

1-2 teaspoon of chia seed

A tablespoon of finely chopped fresh ginger root

½ teaspoon turmeric powder

Mash avocado in small bowl, add orange juice and mix well. Add other ingredients and stir together thoroughly. You could blend it in a small bullet blender if you wanted a smoother consistency, but that seems like too much work for me.

If you don’t have any avocado you could just use more chia seed.
