Mint Chocolate Pudding

This vegan mint chocolate pudding is sooo good and you won't feel guilty eating it all.

Ingredients for Mint Chocolate Pudding

1 Avocado(vitamin K, excellent in fiber and it will give it that creamy pudding look and taste. And yes, take out the pit and compost. If you live in a warm enough climate you can plant it and start your won avocado tree.

1 tsp of virgin coconut oil(high in good fats,lauric acid)

4 oz of cashews(mono-saturated fats,magnesium.it will bring out a rich nuttiness to the pudding)

half of one frozen banana(for potassium and for sweetness)

4 sprigs of fresh mint(high in vitamin A, Vitamin C, and Iron)

4 tsp of raw cocoa powder(high in theobromine)

a pinch of sea salt to enhance flavor.

Blend, and chill all ingredients for an hour or two or enjoy straight away :)

***Side notes: If you are allergic to any of these foods you may exclude them from this recipe.

Many cashews that say "raw" very well might not be. The traditional way to open the out toxic husks is with heat.

Raw cacao can be detrimental to health if abused. A substitute would be raw carob powder.
