Healthy Pumpkin Pie

What?!A pie actually that's good for you? YES, this Healthy Pumpkin Pie is just that!Try this raw vegan recipe out. It's easy to make and it won't effect your waistline this holiday season. :)
2-3 cups of chopped sugar pie pumpkin
3 pounds of dates, take out the pits
1 tsp of cinnamon
1 tsp of ginger
1 1/2 cups of pecans
A food processor and blender is needed.
The Crust: add 1/2 dates and the pecans into food processor or blender and pulse until it sticks together. Then put into pan(any kind of round pan will do)and mash it down to form the pie crust.
The Filling: blend the chopped pumpkin, remaining dates, cinnamon, ginger, and persimmon altogether. Spread the filling out on the crust and chill for 2 hours.
