Summer Corn Salad

Romaine (one small-medium head or half a large head)

Corn (kernals from one cob)

Red pepper (one medium, de-seeded and chopped)

Avocado (half medium or more if you're feeling decadent)

Lime juice (approx half a lime, or to taste)

Cilantro (half a bunch, mostly de-stemmed and chopped)

(ingredients make a large dinner salad for one
hungry raw vegan)


Cut or tear the romaine into bite size pieces. With a spoon, scoop out the avocado and put into bowl with lettuce, then massage the avocado into the leaves. Squeeze the lime juice into the bowl and toss. Then add the corn, red pepper and cilantro, and toss again.
Eat and enjoy the yummy summer flavors!

Additional ingredient ideas: you can easily add cucumber or celery if you want more green and crunch. I also like a little bit of radish for pepperiness. Chives are another great herb to add if you want
something that gives it onion flavor, or if you like onions you can add chopped onions or scallions. You can replace the cilantro with basil to give it a different flavor, and lemon might go well with basil instead of lime juice.
