Spinach & Sundried Tomato Salad

This is a super tasty salad, bursting with flavor, and so juicy and moist.

1 pound of fresh spinach

large handful of sprouts (I used an alfalfa fennel blend)

3 to 4 stalks of celery, chopped

Large handful of sundried tomatoes soaked overnight, drained and chopped

Toss all ingredients in large bowl with orange tahini dressing.


Tahini dressing

2 tablespoons of tahini

juice of one large orange

a little water if needed.

Put all ingredients into 16 oz. jar and shake like heck.
