Spinach and Fennel Soupe

This Spinach and Fennel Soupe is a cool refreshing soup great for a warm spring or summer afternoon or evening. It’s quite simple yet it abounds with flavor. This is one I’m sure you’ll enjoy time and time again.


Ingredients

1½ pounds fresh spinach

6 to 8 stalks of celery

1 fennel bulb with green tops

1 cucumber

1 small Meyer lemon with rind

1 avocado


Directions

Chop all ingredients and blend until smooth, which is about 20 seconds in your high speed blender. When I say high speed I am referring to blenders like the Vitamix and Blendtec. If your blender is not as powerful as these you may need to blend smaller batches and mix together in a large bowl before serving. The picture shows the soup dressed with alfalfa/ fennel sprouts.


This recipe, like most of the blended soups on the site is really easy and quick to make and clean up. These soups are also very easy on the digestive system and can be incorporated into a cleansing program of any length. There are enough different soup recipes on the site to keep the palate from getting bored and then there’s your own imagination after that.


Nutrient Profile

Spinach – has a very high nutrient density and is said to be good for the blood due to its rich iron and chlorophyll content. It’s a great diuretic and laxative, and cleanses the blood of toxins. Spinach is soothing and nourishing, and high in beta carotene, folate, vitamin K, B1, B2, B6, vitamin C, vitamin E, calcium, copper, iron, magnesium, manganese, potassium, sodium, and zinc. And contains omega 3fatty acids.

Fennel – is great for the digestive system. It contains high levels of folate, B5, vitamin C, calcium, potassium, magnesium, manganese, phosphorus, iron and copper.


This recipe is a good meal for one person or a nice entrée if split with a friend. It could be served with a few raw crackers on the side if you're looking for a little crunch.
