Savory Veggie Stew

Here’s another one of those hearty recipes. This one is smooth and creamy due to the avocado, and oh so satisfying. You’re basically going to process the ingredients in your food processor until you get the desired consistency.

You’ll have to process in two batches to get the full serving for one hungry raw fooder. It’s best to mix in some watery stuff with each processing so it goes smoothly. If you’ve used your food processor much you know what I’m talking about.

Ingredients:

most of a large head of romaine lettuce

½ head of cauliflower

1½lbs. of tomatoes

1 ½ to 2lbs cucumber

large handful of flat leaf parsley

1 avocado

3 or 4 slices of fresh ginger root

1 tsp turmeric powder

1 small hot pepper

The portions of each ingredient can be adjusted to what you have on hand. I was using up the last of my summer harvest from my garden for some things, but it worked out really well. It was very tasty and filling.

You could add a little fresh lemon or lime juice, some seaweed, celery, or any other vegetable on hand. These stews and chowders are great for using up odds and ends before they spoil, but as good as they taste you'd never know it. Enjoy!
