Honeydew cucumber soup

One ripe and luscious honeydew melon - scoop out the flesh and capture as much of the juice as you can.

One and a half English cucumbers (or comparable amount of regular or persian cukes) - peel and cut out seedy area unless tender and sweet.

A couple sprigs of mint - remove leaves and discard stem

In the Vitamix, blend the cucumber and mint, then add the melon and blend again. If possible, blend on low for the melon so it doesn't get frothy. If desired chill before serving, or just consume immediately. You can make this more or less sweet or savory by playing with the ratio of melon to cucumber. It's also good without the mint. (serves 3-4 people)
