Holiday Slaw

This salad looks festive and the holiday colors will brighten up any holiday spread. It takes a short while to prepare and is very satifying.


Ingredients:

Napa cabbage (approximately two pounds)

Carrots (two large)

Raisins (approximately 1/2 pound)

Cilantro (1 bunch)

Meyer Lemon (one small or half a large)

Grate the cabbage and carrots in a food processor in batches. Add the raisins and toss to marinate. Zest the lemon first, then juice, add and toss. Chop the cilantro, add and toss. Then enjoy!

I ate this all for my lunch, but it would serve two or more as a side dish.
