Gazpacho Refresher is a beautiful blend of healthy vegetables to fortify and refresh you. Instead of chopping all the ingredients and serving in a bowl as a side dish or dip, this juice brings the gazpacho flavor right to your lips in an interesting blend of south of the border flavors.
Most people love a good gazpacho and will appreciate this juice which is loaded with nutritional value and particularly high in Vitamin C. Seems like this would be a great juice for someone feeling a little under the weather or battling a full blown cold.
This would also be a great juice for a juice feast or an addition to your list of juicing healthy favorites.
Ingredients for Gazpacho Refresher
6-8 Roma tomatoes
3-4 large kale leaves, without stems
1 small shallot, peeled
1 red or orange bell pepper
1 orange or yellow bell pepper
1 large cucumber
1 TBs fresh lemon juice
2 TBs apple cider vinegar (optional)
1 dash of cayenne pepper, (as much as you like)
I juiced this and it was a really nice change from the sweet drinks. I suspect if you don't like regular Gazpacho you won't like this. I think it could very easily be made in the blender too, I just haven't tried it yet.
