Collard Roll-ups
Use large tender leaves and cut them lengthwise removing the stem. Lay out each side and place the following ingredients at one end, and roll up. You'll get two roll-ups out of each whole leaf.
shredded carrots
fresh sprouts
thin cucumber sticks
grated diakon radish
basil, cilantro, or parsley leaves
sliver of fresh ginger root
dulse (optional)
Sauce
Put 2 tablespoons of walnut butter and the juice from one orange in a jar and shake vigorously for one minute.
